WITH more bad money-related news this week, we’re all looking for ways to keep our costs low. 

Luckily one savvy chef has shared how she meal preps a week’s worth of meals in one afternoon – and all the ingredients come to under £20. 



Mimi, known online as @beatthebudget, regularly shares food content with her 235,000 followers. 

In one of her latest videos, the foodie shares three easy recipes that can be easily stored in the fridge.

“Hope you love the recipes!” 

During the reel, the content creator shares three recipes she batch cooks to feed her throughout the week. 

This includes a chicken and pepper tray bake, a warming soup with crispy croutons and a Penang-inspired aubergine curry. 

For the tray bake, Mimi starts by slicing up red, yellow and green peppers and laying them on an oven tray, before placing chicken legs on top.

While this is cooking, she cooks off a white onion and chops three carrots. 

She then dissolves a stock cube in some water, before pouring it into the tray with the chicken and peppers.

Finally, she adds mangetout and coconut milk, before placing the tray back in the oven. 

In the comments, Mimi did confirm that the final price was different to the receipt as she forgot one tin of coconut milk. 

Fans loved the recipe, with the video gaining more than  2,147 likes and 102,000 views. 

Mimi’s followers thanked her for sharing the idea, with one writing: “You're literally the best. You're saving me sooo much time and money. Thank you soooo much darling!!!”
