A doctor has revealed her recipe for spinach and broccoli frittata – a dish she refers to as ‘handheld rainbow goodness for messy toddlers’.
The mum of two who works as a GP in Victoria posts recipes on Instagram, helping home cooks add more colour to their plates.
Known as ‘The Wholesome Doctor’ online Dr Preeya Alexander is loved for her down-to-earth approach to food and amusing additions to her recipe notes.

‘I promise it will blow your undies off it’s that delicious and that your kids will love it (look these are empty promises but stick with me),’ she wrote alongside a picture of the dish.
Her recipe calls for broccoli, spinach, garlic, onion, eggs and cheese as well as a splash of milk.
To begin she browns the garlic an onion before adding her green vegetables – cooking them in the pan until soft.
She then beats her eggs and says she doesn’t mind the type of bowl people choose to use to do this.
‘No one actually cares if it’s plastic or ceramic mate,’ she joked.
‘Whisk away with a splash of milk – a fork will do, if you want to feel fancy get the whisk out BUT remember you have to clean the thing and it ain’t fun.’

How can I make broccoli and spinach frittata?
1. Pop a little fry pan on and throw in a healthy glug of olive oil, brown your onion and garlic
2. Add your blanched broccoli, spinach and wilt – so about 10 mins
3. Crack your eggs in a big bowl whisk away with a splash of milk
4. Sprinkle (a lot) of cheese into egg mixture and toss in your cooked rainbow mixture
5. Season with pepper and mix it all around
6. Bake at 180 degrees for 35 mins

She then adds her cooked greens and the cheese to her eggs and pours the mixture into a baking dish and adding a healthy sprinkle of pepper.
‘Feel proud and embrace those tingles you get for being a super hero,’ she said.
The frittata is cooked at 180C for 35 minutes and is ‘perfect for breakfast, lunch or dinner’ according to the popular doctor.
The recipe appeared to inspire hundreds of Dr Alexander’s followers who vowed to make it at home.
Dr Alexander shares information on science, the pandemic and healthy recipes and has 49k followers.
